Zesty smoked sausage and crispy seasoned potatoes bake on one tray for an easy dinner with just 10 minutes of prep. Serve the sheet pan sausage and potatoes with baked apples, oven roasted Brussels sprouts, broccoli and cheese, or a classic Caesar salad. Don’t forget a basket of biscuits, cornbread, or fluffy one-hour dinner rolls on the side, too!

Sausage and Potatoes Recipe

You can’t beat an easy sheet pan supper (also called a “cheat sheet” or “sheet pan dinner”) for quick meal prep and minimal dish washing! I’ve combined my kids’ favorite smoked sausage with my husband’s favorite crispy seasoned potatoes for a quick weeknight dinner that makes everyone at the table happy. Add a salad or green veggie on the side and your sausage and potatoes meal is complete!

Ingredients

This is just a quick overview of the ingredients that you’ll need for the best smoked sausage and potatoes recipe. As always, specific measurements and complete cooking instructions are included in the printable recipe box at the bottom of the post.

  • Italian salad dressing mix: just the dry seasoning — do not prepare the dressing according to the package instructions. I use the Good Seasons brand.
  • Olive oil: helps the potatoes and sausage brown in the oven, adds great flavor, and prevents the ingredients from sticking to the pan.
  • Garlic powder and ground black pepper: for extra flavor.
  • Baby Gold potatoes: you can also substitute with baby red potatoes. The smaller baby potatoes do not need to be peeled, and they can be easily quartered into bite-size pieces.
  • Smoked sausage: we like smoked turkey sausage, but you can substitute with smoked pork sausage, beef sausage, or use a different fully-cooked sausage like polish sausage (kielbasa) or andouille.

How to Make Sausage and Potatoes

You’ll have crispy potatoes and flavorful, browned sausage on a single sheet pan with just 10 minutes of prep! It’s an easy recipe that the whole family will love. Plus, not too many dishes to wash at the end. Can’t beat that!

  1. Whisk together the dry Italian dressing mix, olive oil, garlic powder, and black pepper in a large bowl (or combine these ingredients in a large Ziploc bag).
  2. Add the potatoes to the olive oil and seasoning; toss to coat.
  3. Spread the potatoes in a single layer on a rimmed baking sheet.
  4. Roast in a 400°F oven for 20 minutes, stirring the potatoes halfway through.
  5. Add the sliced sausage to the pan. Stir the sausage and potatoes so that everything is coated in the olive oil and Italian seasoning.
  6. Bake for 10 more minutes, or until the potatoes are crispy on the outside and fork tender on the inside, and the sausage is nicely browned.
  7. Garnish with chopped fresh parsley, if desired.

What to Serve with Smoked Sausage and Potatoes

Add a salad or vegetable on the side and your easy dinner is complete! Here are a few ideas:

  • Fried Cabbage with Apples and Onion, Braised Red Cabbage, or Roasted Cabbage
  • Charleston Red Rice or Rice Pilaf
  • Coleslaw or Vinegar Coleslaw
  • Hoe Cakes
  • Skillet Cornbread, Bakery-Style Corn Muffins, Honey Cornbread, Old-Fashioned Corn Sticks, Sweet Cornbread Muffins
  • Creamy Baked Mac and Cheese, Crock Pot Mac and Cheese, Stovetop Shells and Cheese, or No-Boil Easy Mac and Cheese
  • Southern Buttermilk Biscuits, Flaky Biscuits, Aunt Bee’s 3-Ingredient Buttermilk Biscuits, Sweet Potato Biscuits, Cheese Biscuits, Easy Drop Biscuits
  • Pumpkin Bread or Pumpkin Muffins
  • 3-Ingredient Sour Cream Muffins
  • Wedge Salad, Classic Caesar Salad, House Salad with Candied Pecans, or a Green Salad with Red Wine Vinaigrette
  • Arkansas Green Beans with Bacon or Southern-Style Green Beans
  • Broccoli Cauliflower Salad
  • Fried Apples or Baked Apple Slices

Storage

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in a large skillet over low heat on the stovetop until warmed through and crisp again. You can also reheat individual servings in the microwave for about 1 minute.

Do not freeze the leftover sausage and potatoes, since the texture of the potatoes will be mushy when thawed.

Recipe Variations

  • If you don’t want to wash an extra bowl, you can use a large Ziploc bag to mix together the olive oil, seasoning, and potatoes.
  • Substitute baby red potatoes for the baby gold potatoes. These baby potatoes have a thin skin, so there’s no need to peel them before roasting.
  • Just about any fully-cooked sausage will work in this recipe. We like smoked turkey sausage, but you can substitute with pork smoked sausage, beef smoked sausage, or use a different fully-cooked sausage like Polish sausage (kielbasa) or andouille.
  • Add veggies to the sheet pan. Try sliced green bell pepper, red bell pepper, or a mix of colored sweet bell peppers.

Tips for the Best Sausage and Potatoes Recipe

  • Dice the baby potatoes into uniform bite-size pieces so that they cook evenly and become tender in the oven. An average size baby potato should be quartered, very small potatoes can be halved, and larger baby potatoes can be cut into eighths.
  • Coat the potatoes and sausage really well in the olive oil and seasoning mixture. This will help the ingredients brown, prevent them from sticking to the pan, and add great flavor.
  • Wait to season with salt until you taste the meal at the very end. The salad dressing mix has salt in it, and the sausage is naturally salty, so you likely won’t need any extra salt.
  • Garnish with chopped fresh parsley (or other fresh herbs like rosemary or thyme) for a bright finishing touch.
